Cornouaille AOC/AOP Cider, produced in the Breton Cornouaille region (south Finistère, around Quimper), is the only Breton cider enjoying this protected designation of origin. It is crafted from pure juice of local apples, unpasteurized and uncarbonated, in approved orchards following strict guidelines: limited yields, analytical and taste control of each batch, slow fermentation in vats, and natural effervescence in the bottle. The terroir, characterized by its mild and sunny climate as well as soils rich in tannins, imparts the apples with a remarkable aromatic and structural quality.
From a sensory viewpoint, it stands out with its golden to orange hue, lively effervescence with fine bubbles, and floral, fruity, or slightly spicy aroma. On the palate, its robust tannic structure, gentle bittersweet breadth, and sugar-bitterness balance make it a refined semi-dry cider.
