Located in Rots, between Caen and Bayeux, Ferme de Billy has been continuing a family tradition deeply rooted in the Norman terroir since 1651. Under the guidance of Henri Vauvrecy in the 1980s, it shifted towards cider production, now spearheaded by his son Olivier. Combining both high-stem and low-stem apple trees, 14 varieties of apples are cultivated here using sustainable farming practices, resulting in a range of award-winning ciders, juices, pommeaux, and calvados. With its 13th-century Gothic chapel and tranquil donkeys, the estate embodies authentic craftsmanship in a picturesque setting, reflecting elegant terroir.
